how do you achieve air flow in a closed system
Great question.
Some of us do not vent. I do vent by slightly opening the lid of my enclosure. (it's hinged)
If it is a very large one like you've seen. The one made of wood. Venting would not be needed.
For now, get most of your enclosure covered and then tweak it. More or less until you get your result.
In the long run, you'll be very happy. It's simple and permanent. (A closed or partially closed system)
Once you can maintain warmth and the correct humidity, you can relax and worry about other things.;)

In vivariums air gets between glass, in most closed systems air can get in somewhere, even if you hinged a lid the same as your enclosure you would not get it air tight. Then there is everytime you open the lid your letting air in. Also torts don't require as high oxygen levels as we do. Don't quote me on this but I think humans require 6 or 7 times the oxygen levels of a tortoise.
Then I think, do the babies hidden deep in the moist undergrowth where humidity is high get as much oxygen as if they were out in the open. I doubt it. It's like you getting under your bed covers in bed.(I hate that).

he refuses to eat and spring mix or mazuri, the only thing he will eat is fruit and even that he does not eat a lot of, any suggestions on things i can feed him

I live in panhandle of Florida and have to provide supplemental humidity this time of year th room is at 54% humidity while both upper and lower enclosures stay above 85%RH easily w a cpl spraying a week and cypress mulch had plenty of time to dry out.

Mushrooms, dandelions, plantains, thistles, hibiscus leaves and flowers, succulents, aquatica pachira leaves, grape vine leaves, prickly pear cacti.

Fruit with finely chopped greens.....Then a little less fruit and more greens, etc.
Mixed up so he can't pick and choose.
Are you offering Mazuri LS?

I live in the northeast and can vouch for closed chambers efficiency for heat and humidity retention in a non-tropical environment. I have four cherryheads and had many issues early on with an open enclosure. I’ll add that Arizona has a dramatically different climate than this tortoises native climate; especially in terms of humidity.

I agree with @ZEROPILOT regarding contradicting information though there remain some who believe redfoots do not need UVB exposure so sometimes there can be confusion. I also like to provide my redfoots with options, so my enclosure has a heating gradient; the cool, dark end is 81 and the warm, bright end is 85 with a basking location.

I do think that many keepers keep baby Redfoot without much exposure to UV. The thought being that in the wild, they spend little time in the sun.
I can't vouch for that because mine get UVB as a matter of them living outside.
