New tortoise seems a bit restless and trying to escapee

First attempt at a decent setup:

She was too big to fit under the wood, could escape (maybe) on the grass, temps under the ceramic heaters were a bit low for my taste.

Just got a Herman's tortoise, she's close to 2 yo. Was bred in a glass terrarium with plenty of brothers and sisters. At home we set her up on a table (see picture), yesterday.
1. It pooped a lot during the 30 min trip. I understand this is stress related, but how do we hydrate it back? It's not eating much at all. I put a strawberry as a more "attractive" food but she doesn't care. Baby food (carrot) diluted in water, is that a thing or is google playing tricks on me?
2. It's constantly trying to escape, walking along the edge of the table (the part that's not covered in bamboo and the one next to the flowers on the left). Should I put obstacles in the way so it doesn't look like a long straight path (move the aloe for example), or should I have something on the wall itself so it's not just a big white surface?

Temps are fine (34C to 24C at day depending on position, the whole room is 22C, will be getting a thermostat at some point if needed), humidity is fine (there's 15cm of coco based soil and quite bit of moss).

She loves to hide under the reddish rock on the left, on under the wood on the right. Last night she slept besides the succulent.
I built this ikea hack enclosure because I read that glass terarriums are not the suitable, plus they were tiny, this is twice the size of what the shop was pushing.

Am I worrying too much, where do I start?

It's sleeping right now (in the vase thing), so maybe tomorrow, but it's 4" long, the enclosure is 55 by 28".

Hi and welcome.
What are the dimensions, as you cannot see from the picture.
I love what you have done. Looks beautiful. I will leave the critics to the experts as far as humidty and closed chambers are concerned. There are caresheets on this forum for herman torts. I would suggest reading them to get a better idea on how to care for your new tort. With regards to the pacing it might just be that your tort is checking it's new home out. I would give it a few days before starting to worry.
Good luck. Can we possibly see pictures of your tortoise and get those dimensions? That would help tremendously to figure out if there is anything wrong other than your tort just looking at its new home.

How tall are the sides?

Just some perspective, when I first got my tortoise, he was only a little over two months old. The first few days, he spent time pacing the walls and checking out the enclosure, seemingly giving it a thorough inspection before deeming the space comfortable for him. After that, he found some comfortable places to settle in/around, and doesn't pace the walls anymore. This could be why your tort is also pacing along the walls, as if it is checking out the place to make sure things are okay.

Sides are about 7 to 8" above the ground. He was clawing at the corner next to the water too, that's why I thought he was maybe confused by the white walls. I'll give it a few days and see if he keeps doing that.

Hi ya! My family are getting a tortoise soon and we were looking at enclosures people have put together from IKEA and came across yours! It's great and I love it. How did you put it together ? What was involved and how ? Thanks !

It takes a while for tortoises to settle down in a new territory. And yours is used to living in a large group of tortoises, so he's going to feel especially vulnerable. Once he realizes he's safe in there, he'll relax and start eating. For now, place him in front of the food every time you walk by the enclosure. This makes him have to scurry back into the hiding place, and the more this happens, the sooner he'll realize nothing is going to get him.
