If it's truly an ornate box turtle it needs to be in organic top soil, not water. Box turtles are not aquatic species, even though they enjoy water. It needs places to burrow. That needs to be corrected immediately
At what point should I get worried about their lack of eating? This is 3 days in a row now they've totally ignored the food. They haven't even seemed to look at it.

Went into the vet, he checked it out and said the bites weren't full thickness so I'm ok. I just hope this doesnt traumatize her too much with cold weather coming in fast.
It was completely my fault. I left my stupid dog outside for too long and went outside to find that he had harassed and bitten my female 3-Toed on the shell. The damage looks mostly superficial, and no tissue was hurt, but I am worried and don't know what I should do now.

I had a 3-Toed lay a clutch about 77 days ago. No hatchlings yet, but I've been keeping the area the eggs are buried wet daily. Is there a point I should dig down and see if they're just not able to get out themselves? Or are they gonna be ok if they did indeed hatch? The only reason I ask this...
As sure as I can be haha, she does have 3 toes and was sold to me by a 3-Toed breeder. I see why you think that but there is a distinction. Her shell coloration is definitely quite pronounced
Sand is a BIG no-no. Read the hatchling care sheet that is pinned to the top of this forum section, it has a whole paragraph about substrate.
Some mix of organic top soil, sphagnum moss, coco coir, etc. is typically what you would want.
