Best and easiest weeds to grow for Eastern Hermanns

Well the sun is slowly starting to come out in Scotland and I want to attempt growing some weeds for Wizzle. I have plenty of dandelions in the garden so I don't need to worry about them. So simply -

1. What weeds/flowers will Wizzle benefit most from
2. What weeds/flowers are pretty easy to grow
3. Will the Scottish climate even let me grow anything of use?
4. Does anyone have any reccomendations on where to buy this stuff online in the U.K?

I buy the wild flower tortoise mix and dandelion seeds from eBay or amazon, they grow really quickly and are ready to eat in 2 weeks. I keep plastic mushroom containers, Chinese takeaway containers and cut down plastic cups which can be used again and again, they grow well on the window sill. It's great to watch Hokie eating fresh food growing in his table, choosing what to eat himself and when
