In other words if I put lettuce in the bananas and papaya in his bowl in the morning and he hasn't eaten it yet should I give him fresh stuff or is that okay later on for him to still eat

No natural food fed to our torts...regardless of amount...is ever left over. As for the pelleted diet of zoomed...I moisten it into a mash and deliberately over feed. The reason I do this is by morning it turns into dry bits of “hay” which I leave to get the torts to learn to eat dry grasses and hays as well as the moistened version. If there ever were left over natural food...I’d remove it simply because I prefer to feed fresh food and to not risk insects or fruit flies becoming a problem

There are different ways of doing it by different keepers.

It is fine for 24 hours, but for hygiene reasons you must then clean the serving dish/rock and change the food.

I am perfectly OK with leaving it overnight. Sometimes my tort got up before me and he didn’t seem to care if the greens had gone a bit limp.
