I can't offer you any advice on raising the hatchling, but I have some advice on the 2 or 3 other hatchlings you may find in the pen:
Get down on your hands and knees and go over the pen inch-by-inch. If you see a clean little dime-sized hole in the ground, gently probe down into the hole, and you may find some more babies. Continue looking over the whole pen, fluffing up any loose dirt with your fingers, and hopefully you may find more.
I just happened to think...maybe Greeks only have one baby? So maybe I'm wrong.

I'm glad you found the little one. Like Yvonne said there could be 1 or 2 more.
You need to set him up in a container with either soil from outside or shredded aspen bedding. You need a lamp for basking, the best would be a combined UVB and heat bulb, and a regular florscent light.
Have a shallow dish of water, but you will still need to soak the little one every other day. When I soak I use Vitasol liquid vitamins for birds in the water for the hatchlings first year. Just make the water a light yellow.
He should start eating leafy greens, like Dandelion, chicory, escarole, curly endive, green leaf and red leaf lettuce, romaine lettuce. Spring mix found in the stores is also good.
You'll need a good calcium supplement to sprinkle on the greens at every feeding.
