Height of viv and substrate questions

I’m planning a viv for a Greek tortoise that I may be getting how do I calculate how tall it has to be ( it will be 2 storeys and I am halving the dimensions and doubling stuff like basking lights and uv lights and substrate) also what substrates do you guys recommend ( sorry if you have seen my other posts I am repeating myself but only cos I want my future tort to have the happiest and healthiest life possible ) also with Greek tortoise should I put magnum moss in the hide

Orchid bark substrate, and don't use moss.
