Are there any signs of improvement I look for when I do these things?

Increase health, vigor, appetite, and over the long term the appearance should improve as the calcium and proper nutrition is able to be utilized and incorporated into the new growth.

Every other day or even 2-3 times a week is probably adequate for this tortoise. Every day won't hurt anything.
