My little quy squirt is super shy, its his first day so i completely understand the shy behavior for a while. doesn't like being watched or really even seeing anybody walking by. but runs out for food whenever possible and people are not around

That's all part of his new environment. His true personality will shine through soon enough. Make sure he sees you often so that he gets to trust you. He'll be in true form soon enough. Keep us posted :)

Most sulcata babies are at least somewhat "shy" for their first few years. Usually around 3 years old they tend to get a lot more bold and fearless. By 5 years old, they will follow you around and you will be tripping over them every time you try to turn around.
