I have just got my new Tortoise and the guy from the shop told me to use soil in the enclosure, what do you think is the best to let him sleep in or roam around in.

Your baby hermann does need an earthy substrate that will hold moisture and raise humidity.

We usually recommend fine grade orchid bark or coco coir. They’re both reliable and they are far cheaper when bought from Amazon or a garden centre than from a pet store.

Make sure that whatever you buy has no white bits that will encourage it to eat the substrate - there are some brands of tortoise substrate that have calcium pieces in them... madness!

You also need to make sure it has no fertilisers in it.

Coco coir can be bought in bricks that you soften with water like this from Amazon

If you shop at Amazon get yourself a Temperature Gun as well. They are far and away better than the thermometers sold for use in vivariums!
