what night temps should a tortoise have

What kind of heat mat and do you use a laser temperature gun to double check? Please include photos- grumpy torties are well loved!!!!

I would not use a heat mat for a tortoise. If you need night heat, use a radiant heat panel or ceramic heating element mounted over head and controlled by a thermostat.

Night temp for any temperate species, like yours, should drop into the 60s (16-21C). They can tolerate 50s (11-15C). Low to mid 70s (22-24) is okay too, but they benefit from cooler nights. No one should be keeping a hermanni above 80 (26C) at night.

by the way is there something I can use as bedding along with topsoil substrate
I would never use bought-in-a-bag soil. You can't know what composted material it is made of. Could be something toxic or dangerous. I prefer coco coir for smaller Testudo, and then I switch to fine grade orchid bark once they reach about 4 inches. I like a layer about 3-4" deep when damp and hand compacted.
