Is there any guideline on how much Mazuri to offer? I have a 30 pound sulcata and usually set about 5-10 pieces of classic Mazuri 5M21 out with his greens each day, but I was wondering what kind of serving size others use?

I feed as much as my Redfoot will eat in one feeding.
However, Sulcata are different than Redfoot.
So, I cant even suggest how often to feed it. But im sure that feeding it every day is not good. It must be a small portion of what you are feeding overall.
In fact, feeding Mazuri as often as you do will likely be the issue. Not how much of it.
Let's see what members that keep Sulcata have to say.

My guy's 6mo, and I give him 2 softened pellets 2-3 times a week, mixed up with his other food.

The Feeding Directions on the Mazuri product page recommends 2-4% of the animals weight. However, they don't specify a time period.

I believe when I started feeding mazuri the recommended amount was between 1 to 3 percent of the tortoise's body weight. I feed Walker some daily. What he gets is less than 1 percent of his body weight though. I use a large sweet potato can full daily and it is usually the last thing he eats before he goes back into his house.

I just weight some Mazuri's and they seem to be about 1.2g per piece. 1% of 30 lbs would be about 136g, which would mean over 100 pellets to total 1% of his body weight, which seems like a lot :D

I'm guessing I'm safe with the amount I'm feeding now then.

I have a specific dish that I use for Mazuri, and unless Vlad has an issue with the main meal of the day, he usually stops by and has a bite of Mazuri throughout the day, and then will have a few before he goes in for the day, but he never really pigs out on Mazuri and ignores the greens.

My Redfoots get a mix of different fruits and vegetables everyday and I add about 5-6 pellets of soaked and mashed Mazuri to it about 5 times a week. No real schedule.

I have a “feeding area” where I feed our Sully now that he’s inside for the Winter. In the feeding/grazing area where i have a large amount of orchard and timothy hay mixed. For feeding, I’ll mix up a large bowl of moistened timothy hay, romaine, dandelion, maybe a few slices of dehydrated pumpkin. When it’s all nice and “fresh” i dump this on the grazing area along with a good handful of hard Mazuri pellets (maybe 25).

Having things mixed encourages grazing on everything, pellets, hay, orchard grass, cuttle bone, etc.

My adult Redfoots get a single layer in a cafeteria size tray once a week. Feeds and satisfies five. Other six days fruits and/or veggies. Hibiscus cuttings every day to graze on.

    Re-running the numbers-
1-4% of animals weight (from the bag)
    30lbs = 13,600 grams
    3% (a middle number) of 13,600 is 408g
408g is about 14-15 ounces, so less than a pound

A couple points from the bag include-
 Feed consumption will vary with environmental temperatures, activity and lifestage.
 Provide good quality grass hay or browse.

My 70lb Sulcata just had a wellness visit with an exotics vet, who advised me that his primary diet of grazing on grass is perfectly sufficient for him, though the Mazouri supplement I've been offering is good too.
My tortoise loves it as a supplement, but often does not eat all of it before re-discovering a patch of grass to munch on (and sometimes flipping the expensive bowl of Mazouri feed in the process ). The vet said that as long as he's eating the fresh grasses regularly, he's getting all the nutrients he needs. Over-feeding leafy greens, however, deviates from their natural diet.

In short, the Mazouri guideline is very broad, and I'm sure they would be willing to help over the phone if you have questions about their particular product!
