A lot of determining if they are over weight has to do with their size. How long is he and how much does he weigh now? You could call your vet to find out what he did weigh. To see if my Greek is on track I always look for threads with people with Greeks. I look for similar size and ages.

I have food for my little one all the time as well. I've never really measured it but I just fill his bowl up and if he eats all of it through out the day I put some more in. Now mine is still a baby, so I do make sure he always has food. For an older Greek, if he eats all his food in one day...
I'm not really sure. I haven't heard anything like it. From my understanding, the shell doesn't really shed and new growth is the only changing thing on them aside from healing spots from damage or something. But I can definitely see what you mean, especially in the scute right behind his head...
