New to torts and took in a rescue. Supposedly male greek bought 1 yr ago

Hi everyone :) I love this forum, it has been incredibly helpful for everything I've neededd to learn with this guy/girl. I've always loved torts and been fascinated with them. I rehab and take rescues of other reptiles and furry critters too so I thought I would try torts. I'm wondering if its male or female and I know age is difficult if not impossible to guess, based on its care and if its WC or not. She says it was purchased at petsmart 1 yr ago. Our petsmart doesn't sell greeks, but I'm not sure they didn't a year ago. I couldn't afford a tort so I didn't really look. Here are pics of the types other posters helping with ID have requested. Also if anyone has any subspecies guesses, that would help me pinpoint specific care issues. I'm a little confused on humidity and if/how much he needs at his presumed age(I'm guessing over 5 yrs.) I've never been able to tell the Jordanian, Syrian, or Lebanese Greeks apart. The Libyan, Tunisian, and various Turkish, Greek, and Bulgarian specimens are generally pretty easy to differentiate, but I've always had great difficulty differentiating animals of a near eastern origin, but from the look of the tortoise, it is a male originating from Syria or Jordan, probably Syria from pics I've seen of tortoises from the region (type the country of origin and tortoise into Google's image finder; you can see pictures of tortoises in their native country, which is usually a big help). Ultimately, I think we need the input of Egyptiandan.

I have one greek tortoise of Lebanese origin (I determined this after much deliberation). I was lucky in selecting a healthy animal from the start, and now he lives outdoors in a fenced paddock with lots of sun, shade, and a wide variety of plants upon which to graze and hide beneath.

Wow, I had no idea there were that many different types! Thanks for all that, it will help me tons to have some more detail. He's finally settled in I think. He's starting to eat like a pig and that's good, because I was worried about him not eating much. Humidity is my other concern. I've read so much that I'm not sure what greeks need, I've see everything from none, to 70%. And he's got a touch of a hissy snoring type sound when he startles and sometimes when he's just sitting there. I vaguely recall having run accross some entry about a dry greek wheezing. Any input would be greatly appreciated.
