Anyone here have any luck growing plants using only coconut coir inside their enclosure? I would like to stay away from using soil mixture if possible.

I have grown plants in just the coconut coir, although sometimes I still put the plants in pots with the coir.

Coconut coir doesn't really have any nutrients in it for plants to grow. I have tried dandelion in coconut coir, and they don't get past the seedling stage. They don't die either, but they just stay tiny. Try putting the plants in a pot that the tortoise can't reach

When I first started putting plants in his enclosure I used a base of organic soil and then covered it with Coco coir, now it's all mixed up and all is well.
