I've been searching all over the internet but nothing read actually stated how deep the substrate should be for a Western Hermann's tortoise. I read for some other mediterranean species the need enough to bury their entire shell in. Is that the same case for the Hermann's? Any input on substrate depth would be much apprectiated.

Really, it doesn't matter. Just don't make it deep enough to where they can sink in.

My Hermanns is very big on burrowing. I provide 3-5 inches with landscaping and he chooses where he likes best. He really enjoys burrowing under sphagnum moss.

Ask yourself how deep the substrate is in nature?

I like a deep substrate for my Russians. But as long as they have places to hide they rarely dig to the bottom. I think your enclosure depth will decide how deep the substrate can be. If you use 12" tall sides than your substrate can't be more than about 6 inches deep.

So, I'll suggest from 2" to 8" substrate depth will be good for most enclosures.

Thank you for all of the advice. I will adjust the depth accordingly.
