If you want them to have some tall grass for security I would let a good enough sized area to just go crazy tall so they can chill in there and trim the other part of the pen so they can graze.

I'm just going to plant some of that "monkey grass" as call it from home depot and keep the regular grass clipped.

I Planted some blue fresc for mine to hide in but it didn't grow for some reason. Luckily I grew some hollyhocks and zinnia around her hide and dumb luck it was perfect for her to hide in and very pretty.

In addition to the above, tall, thick grasses retain moisture at their bases. This is often too much ground moisture for some species. I cut down the tall grass about monthly in my outdoor enclosures, just leaving large tussocks of grass in strategic places for shade for the tortoises.
