A few questions

We have 2 hermans and they get along really well. The only thing is, is that one is a lot larger than the other! Is this normal. Also the smaller one sleeps a lot more and the other is roaming around a lot more thannthe smaller one.

If they are the same age, and one is larger than the other, you probably have a food bully.

Bigger enclosure, more food, feeding on separate sides, separation.

There enclosures are big enough seeing as there only 2 years old. They have plenty of food there's always some left over. Any info on why one sleeps more than the other?

Tortoise generally should not be kept in pairs. They don't like or want company. In any situation involving two animals, one is dominant and one is submissive. In the wild the submissive would leave the area and go find his own space. In our enclosures this is not an option and they are forced to deal with what we give them. This causes long term chronic stress, which leads to loss of appetite, weakened immune system, lethargy and eventually death.

Separate your two. Move the big guy to a new enclosure. The little guy does not need any added stress. After a few days, when he realizes his oppressor is gone, he will likely get more active, his appetite will increase and he'll start growing more. I have seen this many times...
