When I give her water she leaves behind a white paste substance. Should a I be worried?

No those are urates which is essentially pee. If they’re the consistency of toothpaste you’re good. If they get gritty do warm water soaks soaks daily to rehydrate.

Watery white urates are fine too, just shows a well hydrated tortoise. Just be wary of gritty as Danielle said. You took it better than I did the first time I saw it. I was just sure I fed the wrong food and he puked haha. Freaked me out.
Weird to us but totally normal
