Best things to plant for a Horsefield..

I live in the UK and am not able to leave Tortie outside to graze, so I was wondering what plants would be best to plant inside her table. What grows well like this? All plants will be in containers so she cant get at the roots, so would need to grow in a position she could reach them. What would you plant for eating and what works well as cover?
