On the way home from coffee today, like a crazy person, I made my boyfriend pull over so I could snag this cactus on the side of the road. It's pretty much spineless, and the tiny spines it does have easily come off. Is this opuntia/another variety my russian can have?

Yep, that's an Opuntia spp. but I don't know the specific epithet. Should be fine to feed to your Russian and you may want to plant a few pads to grow for future food. Just stick them in some well drained soil and throw them outside. I let the rain irrigate mine, they really don't require any care other than 1-2 waterings/year and well drained, limed soil.
