Try soaking your beardie in lukewarm water. This will allow the skin to soften and make it easier to come off. If you need any tips, check out this website: http://beerdies.webs.com/
The people there can help you with any questions. I works kind of like how this forum works :).

Definitely soak him; it'll help. For what it's worth, it takes my beardies easily 2-4 weeks from the time one part of their body goes opaque (turns gray) until it actually sheds off.

There are two fantastic beardie resources I would like to refer you to.
First, http://beardeddragon.org. It's sort of the TFO of Bearded Dragons complete with a great care sheet (and links to more great care sheets) in the "Articles" section, and a forum that works much the same as TFO where you can post your questions and concerns to get answers from very experienced beardie keepers.
Second, http://www.beautifuldragons.503xtreme.com/home.html (which can also be reached just by typing BeautifulDragons.com into the address bar). Though there is no forum to ask questions at, Beautiful Dragons is hands down one of my favorite bearded dragon resources. They have competent care sheets with good information, articles on some of the really important subjects (i.e. UVB and MBD), and a great "Nutrition" page with a chart listing different food items, their nutritional content, whether it's recommended you use them every day, often, not-so-often, or just plain never, and why.
On the same subject as the Beautiful Dragons Nutrition page, the Green Iguana Society has a similar, also good "Food Information Chart." It's based for Iguanas, which are herbivorous, so it's only greens/veggies/fruits, but it's a good resource when you're looking for things to feed your dragon: http://greenigsociety.org/foodchart.htm

Definately sounds like a shed. A good soaking will help, I use a soft bristle toothbrush and "comb" the shedding area while they soak. They love it and will rub against the brush if I stop, it helps it start to peel off.

it can take them weeks to fully shed, they normally shed in sections -head, torso, and tail
