growing plants in coconut coir

Getting frustrated with Juno's food spoiling in the fridge, I've decided to try my hand at growing some mixed greens. I have a brick of eco-earth coconut coir left over and am just wondering if that would work for a growing medium. Also growing some forget-me-nots that I'm going to trans plant into her enclosure once I think they will survive her munching and tramping around.

Coir is an excellent medium for seed starting and is sold by gardeners supply places for this purpose. Go for it!
