I'm pretty certain that's sphagnum moss!!
Sorry, definitely not one of the Spagnum mosses. Generally, mosses are not safe for eating.
OK, I'm not going out on a limb with a genus for a European moss when I can't examine the capsules and spores, but here are a few likely candidates: Rhytidiopsis, Aulacomnium, and Homalothecium.
I have a Horticulture degree, and a Botany minor; all my post-graduate work was in the sphagnum bogs, so, I know the genus, but mosses are not my thing. I hope JeffJeff can at least use the information.
