If I make my enclosure out of cinderblock should I sink 1 or 2 blocks into the ground?

I would not sink the blocks into the ground. They can shift and mess up the foundation. Pour a footer of mortar/concrete in the ground, about 6-10" deep and let it dry. Then you can install the cinder block on top of that. Will be much stronger and last longer.
