"Starter" weeds? What tastes the best?

I am interested in opinions as to the best-tasting weed for a tortoise making the slow conversion to a healthier diet.

We are in a mild area of Southern California so the choices are good...unless you're the picky eater! I'm working on burr and sweet clover right now but perhaps there is another delicious starter weed besides dandelion? About the only common weed I don't have much of is spurge.

Mallow and wild mustard are favorites around here. Clover too. Mulberry leaves are fresh and tender right now.

Thanks Tom. She just will not get on board with mallow or lavatera. Snuck a little clover into her today, so that's a start.
