Substrate and walls

I was wondering whether sawdust is a suitable substrate for my Hermanns tortoise to live in, also was just wondering about the size of the walls around the table

No. Sawdust is drying and can cause respiratory issues. Coco coir, fine grade orchid bark, or organic topsoil are much better choices.

I'd do higher walls personally.
