Close up the vents in the sides and back wall. The enclosure is not air tight even with the vents closed off, so no worries the tort will run out of air. That will help bring up and maintain humidity and heat.
According to my father, that with pigs at least potatoes help them digest the corn better. It doesn't seem to matter for the rest of the world though.

In less that information has changed what I found on this site was several people said to feed those rarely. This information could be old though, so if it is ok to feed it more then great.
