3 week old redfoot

I am getting my 3 week old redfoot hatchling thursday.
i know what to feed him but i don't know how much each feed or if i should feed it twice a day or once.

also the Mazuri, how do you wet it?
do i just soak it in a lot water or just dip it and let it set and soften...?

I am a 'have food always available' tortoise feeder. I soak all biscuits and pellets, in a shallow dish with water to half the diameter of the pellet or biscuit, with the pellet or biscuit one layer deep. I wait, if it is still too hard I add a bit more water. After a few trials you'll get a feel for how much water to use for the quantity of pellets or biscuits you use.
