Is this a good varied diet or should i take some things out or offer more for my herman tort?
romaine lettuce
dandelion leaves
water cress
rocket
kale
is this good enough for now as there is not many weeds in the uk in winter.

In my opinion it doesn't do any harm adding more variety. Have you checked out all the grocery store greens listed on the tortoise table?

Those are all good items to use, but add much more variety. Cilantro, endive, escarole, and add in lots of amendments. Soaked horse hay pellets for fiber, dried leaf options, soaked ZooMed pellets, Flower topper, etc... Grocery store produce alone is not enough. You've got to add stuff to it.
