drying weeds out

I want to start drying or dehydrating some excess weeks before they dry up for the season. Are their any weeds a hermann's will eat that i should not dehydrate? Any preferences on how to dry them? Air drying or getting a dehumidifier? Do's and don't? All advice welcome.

cactus pads too! Can those be dehydrated for winter use?
