I don’t think desert torts are greeks.My male desert tortoises ( Greeks) all have concave plastrons, only after they reach about 4 years old.
Desert Tortoises (Gopherus agassizii and Gopherus morafkai), and Greeks (Testudo graeca) are completely different species. There is no Desert Tortoise Greek.
