So I have had my baby Hermann's for about a year now. He spent all summer in his outside enclosure. He is now inside for the winter. He was sold to me as a Western Hermann's, but is probably an eastern. Most said female last year, but now I am thinking male?? What do you think?

Certainly not a western, what you actually have is a Dalmatian tortoise (T. h. hercegovinensis) and it's without a doubt a male.

Yay! A boy... At least he has a correct name :) He pretty much eats only weeds and stuff I grow for him. He has a very varied diet. Since I got him the new part of his shell is very flat and smooth. Was wondering if he looked like he was pyramiding from when I got him. I don't think he could possibly have a better diet. And he has large indoor and outdoor enclosures.

the main cause of pyramiding by lack of humidity in a tortoises enclosure.

His shell seems to have developed a lovely sheen and richer darker colouring. He looks lovely and better than now than in the earlier pictures. Well done you!! :)
