Looks like a variety of dandelion. Have you seen any flowers on the plants yet?
Nope. No flowers yet. I’ve moved to the high desert in Central Oregon and many of the weeds are different. I used a plant app on my phone and it said it was in the aster/daisy family but I haven’t had great luck with those apps.

If I had to guess anything it would be in the brassica family but in the high desert something the aster family does seems more likely.

The plant app didn't specify anything else?

No unfortunately. Maybe I need a better app. I have one called Seek and it’s usually non-specific or just wrong.

I think it might actually be arugula, can you taste it to see if it's peppery? Or some other kind of peppery cress. all are brassicas.

I think it's a variation of horseweed. Not edible and very invasive.
