Cathie tossed a leftover salad into WalkingRock today. It had lots of pretty green leafy lettuse (2 or 3 types) some carrots, cucumbers, brocholi and some mushrooms, NO Dressing! he gobbled it down with a quickness... as an afterthought I looked up Portabello mushroom for edibility and found nothing. Are they edible for Sulcatas?

Yes. Not something that they would normally eat in the wild, but they will not harm him. A lot of us with Box turtles, Hingebacks, Redfoots, Manouria, and other forest tortoises/turtles feed portabellas often because they are a great source of fiber and Vitamin D2.

he gobbled a couple of small ones, but left the rest of them alone after all the good stuff was gone. Thought maybe those couple just got caught up in the feeding frenzy when he would naturally have tried to avoid them.

Most likely. I doubt they taste as good as greens would to him - but I have never seen a forest tortoise turn up its nose at a portabella!!! ;)

Mushrooms aren't harmful, however some tortoises won't eat them. My Russian tortoises won't eat them.

Ok so it won't hurt to try once or twice or feed now and then if Talison decides he like them. That is good to know thanks!
