spider plants are great until your tortoise gets too big and eats it down to the roots...or tramples it

I tried with a spider plant like 2 days ago I found my tortoise trying to climb up the glass to get onto the pot it was in i had to take it out until it gets bigger

Mine tried, too...knocked the plant over, then ate it down to the roots. Plus some roots.

Plants that are tough enough to take a trampling are hard to find. You may just have to get used to replanting new ones on a regular basis.
How about some aloe? They're cheap, tough and can be nibbled on as well.

I wish I could put an elephants ear plant in his/her enclosure so bad

I have allocasia and collocasia both planted in my YF yard. They've taken a nibble here and there, but it's not one they're particularly fond of. It is a mainstay of the Manouria diet though.

I don't see why not. If you notice they're eating it a lot, you may have to block them off from getting to it. But I really don't think they're going to give it much attention.

Can you use hibiscus or cranberry hibiscus? Both are amazing.
