We've been feeding ours once a day because we were scared of over feeding them.

The key question is not HOW OFTEN to feed, it is how much of what kinds of foods to feed. If you want to get real technical about it, you can figure out the daily calorie need, and how many calories need to come from fats, proteins, or carbs, as well as how much calcium, etc it needs. I have a chart at http://www.tortoiselibrary.com/nutguide.html

You can take the daily calories and other dosages and combine a weeks worth, then spread it out however you want- 7 small daily meals, 2 large weekly meals- it does not matter much as long as the intestines stay fairly full.

Also remember- food is one of the few things a tortoise can look forward to. Variety, interest, excitement... properly done meals are a big part of 'happy' tortoises.
