Horsefield substrate

Hi - I have an 18-yr old horsefield that goes outside a lot during summer in a designated run. Evenings and during winter, he has a two-level wooden table. We are just experimenting with different substrates. Previously we have used soil, but this is really messy, and gets very dry very quickly, even if it is regularly dampened. We are now trying with a mix of coconut matting and wood chips at different parts around the run, plus some edible tortoise bedding. Would appreciate some thoughts on this set-up, and in particular, how to best keep this clean. Should there be some kind of absorbent layer under the cococunt matting, for urine and water spills?
