Any tips on starting my 30lb sulcata on hay ?

Yep. Chop it up or shred nicely and place your “normal” food & mazuri on top. Keep doing this, mixing in more & more hay, less and less other stuff. They learn that the stuff they eat along with the other things is food as well.
