Mine are not too fond of Mango.

It's interesting that some of your tortoises have a yellow sclera and some don't. Is that a geographical thing?

I noticed that too. I attributed it it the red pigment touching or very close to the eye. Darker headed cherries don't seem to have it.
In horses it can happen when a white area on the forehead touches the eye.

I hope mine will look as good when they are adults! Beautiful as usual. No mango surplus up north though...

I don't know if it is a geographical thing, but they are born with it. The hatchlings either have it or they don't. It is not something that develops. Personally I love the sclera-makes them look mean! And makes for a nice contrast against the reds.
