Picky red foot

Hello all! I've had my red foot for about a month now, and love him to bits! I named him Achilles after the story of Achilles and the tortoise, but we just call him Charlie. He's approximately 8 years old, is 10" from the front of his plastron to the back, 12" over the top of his carapace, 8" wide across his plastron and 10" wide across his carapace (don't know which measurements I'm supposed to use for references!)

He had a respiratory infection which was treated by his previous owner's vet, but he still wheezes so I'm going to have to take him to a vet again to get that checked out. He gets warm soaks 3 times a week or so, which he LOVES, but I've been keeping his table fairly dry because I don't want his respiratory infection to get any worse :/ any advice for what to do about the infection, before and after he gets treated by the vet?
He's a little spoiled- his current table is 8' by 6', but we're in the process of giving him his own room, with a table measuring 10' by 12' approximately, with a shallow waterfall to keep the humidity up, and in which he can bathe and drink as much as he likes.
Now my big question- how do I get him to expand his tastes for different types of salads?? I'm so worried he's not getting enough nutrition- I offer him a huge salad every day of romaine lettuce, beet greens, cucumber, zoomed pellets (moistened), carrOts, squash, broccoli, fresh peas, small amounts of green apple, and a small amount of spinach, peppers and a protein source once a week or so, all mixed together and dusted with a reptile multi vitamin powder and calcium (he also has several cuttle bones). But of all this food, he only ever eats the lettuce, cucumber and a few beet greens!! What can I do to get him to vary his diet, and what other foods can I try to see if he likes them? Help and advice would be greatly appreciated!

Try not dusting the food for a few times. Quite a few tortoises won't eat if they can smell it has vitamins or calcium sprinkled on it.

Another trick I've used with picky YF eaters was to put all the chopped greens in a bowl, then pour a little jar of Gerber baby food and mix it up. I used the more exotic fruit flavors, like mango, etc. Mix it so that all the greens were covered in the baby food.
