What is this plant growing in my Russian tortoise's enclosure (no tort in there yet so if it's dangerous, don't worry).

It looks like a variegated type of Hosta. Not sure if they are edible or not.

Definitely a hosta. Definitel edible. I grow a ton of these and feed the trimmings to our Sully daily. In fact, many folks will pick the new shoots & saute like asparagus.
