No one got back to me today on the food and diet section as to whether free feeding white clovers is a good idea, so I just went ahead and planted the seeds. Half of the exposed coco coir is planted with white clover and the other half winter rye grass. We'll see how that pans out over the next few days and weeks. It's my first time planting anything directly in the tort enclosure soil.

Looks nice couple things though. Water dish should be buried level with top of substrate and how will you keep the humidity up? The clover should be fine as part of a varied diet. You can always check out the tortoisetable.org.uk to check for edible items.
The water dishes are level with the substrate. It's just hard to tell from the picture. And they have their own shed. The "enclosure" takes up about half the space of the shed since they're still small, but the entire shed is set to their climate.
I've got clover, dandelion, and broadleaf mix planted in my guy's enclosure (as well as a number of decorative plants that serve as hides and sometimes snacks) and they do ok. Troggy mows them as he makes his way from place to place, so I just reseed every week or so to keep his snack bar stocked.
