I am going to assume that certain species of torts breed more prolifically than others. Which tortoise seem to breed the most and which the least? Are there some that you can keep and they may never mate? Or do they all multiply like rabbits when given the chance? I have never had a viable pair and don't have the desire to because of my housing situation and capacity... but its good to know for the future.

It depends IMHO on size also I mean sulc can lay like 3 clitches of 90 eggs or so, but they are also bigger than say a pancake who usually only lays 1.

90 eggs in a clutch is a bit to much for a sulcata clutch. They may lay 90 in 3 clutches (30 each). The largest clutchers are the Asian mountain tortoises with clutch sizes up to the low 70's. The smallest clutchers are Pancake, Bowsprit, Spider and most of the Homopus genus who lay just one egg clutches.
There are a few species that haven't been bred in captivity, but the list is getting smaller and smaller. Geometric tortoises come to mind first.
