So my weeds are sprouting, I bought a mixed packet. Does anybody know what the taller ones are?

Because I don’t know what they are it’s hard to know if they are fully grown lol I don’t know whether to just start picking some now or leave them for a bit longer. I think my tall things much be vetch, never seen it before so thank you.
