So I took everyone's advice and got cocofiber as his new bedding. But! He is always in his water dish and it keeps sticking to him. Will that annoy him?

No. It will rub off. You just might have to clean the water dish more often. What I did to keep the water cleaner longer, I put flat flag stone around the water dish. He would have to walk on them first and it would usually scrape all the coir off before he got into the water.

If you can do what Wellington suggests then I would do that. I dont use coco coir because its way too messy and I have to clean my water every 10 minutes to make it drinkable. I like cypress mulch and orchid bark far and away more than anything else I have used.

What did you use those rocks for before? And is he walking good on them? I have never put those with babies before.
