We call them Camel crickets here DD and you're right...they are jumpy! I made some traps with water bottles set them at night & harvest them into the big jar in the morning.

Matt did well for a minute and ate 2 or 3 before seemingly realizing he was trapped in the bottle. As soon as he got sketchy I took him out.
