Hibernation

I want to get a hibernating tortoise, that is suited indoors at night and outdoor at day, i am quite new to tortoises and want to know what are the processes of hibernation, please can you tell me a good tortoise with the info above, also it has to be reasonably easy to look after.

I have heard that a tortoise needs to go through a fasting period, but how long for a baby tortoise, and does it have to have a paticularly big meal before fasting?
