Hi, I was wondering how people preserve greens in the winter when the growing season is over. I usually but a spring mix or dandelion greens from the local supermarket and refrigerate them but they don't seem to last any longer than 5 days before going bad. I was wondering if they would preserve better if I vacuum packed them or if I froze them. If any one had any advice on what to do. Thanks -Ben

Freezing them turns them into mush. I don't wash mine until I am ready to serve. I also put them in either a glass bowl or one of the veggie crisper a in the frig and I put a damp towel over them. The majority of them last quite a while. The dandelions don't last all that long. If you dried them they would last longer or try the vacuum pack. I have not tried that, it might work.
