Have you ever tried Buffalo? It's really good. Very lean.Its how long you let the old ones hang in the meat locker . I know we let our show steers hang in the cooler for 28 days . Then you cut it up into steaks or ground beef . Yummy! There is nothing like home grown beef and pork . Makes me sad my kids stopped showing them . One steer would fill my deep freezer all year!
